Let’s Get Cookin’!
Here’s what you’ll need:
– 20 grape leaves (fresh or jarred – don’t worry, I’ve got tips for both)
– 1 cup cooked rice
– 1 pound ground meat (beef, pork, or mix it up!)
– 1 onion, chopped fine
– 1 teaspoon paprika
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 tablespoons olive oil
– 2 tablespoons lemon juice
Now, let’s make those dolmades:
1. Prep those leaves: If you’ve got fresh leaves, give them a quick blanch in boiling water for 30 seconds to get rid of any bitterness. If you’re using jarred leaves, just rinse them off.
2. Mix it up: Combine the cooked rice, meat, onion, paprika, salt, and pepper in a big bowl.
3. Roll ’em up: Lay a grape leaf flat, stem end facing you. Spoon a tablespoon of the filling in the center. Fold the stem end over the filling, then fold in the sides and roll it up tight. Keep going with the rest of the leaves.
4. Simmer Time: Put those dolmades in a pot, seam-side down, and drizzle with olive oil and lemon juice. Add enough water to cover them, bring it to a boil, then turn the heat down and let them simmer for 20-25 minutes. They’re ready when they’re nice and tender.

Serve them warm or at room temp, with a squeeze of lemon and a sprinkle of paprika. They’re amazing as an appetizer, side dish, or even a light lunch.
